Usually, yes. In many 1960s and 1970s Simi Valley homes, the wall between the kitchen and the family room carries ceiling joists. It can come out with an engineered beam and posts, and anything inside the wall, such as ducts or plumbing vents, gets rerouted. We check the attic framing before quoting.
